Pot of Gold Cupcakes

If your kids love St. Patrick’s Day as much as mine do, these Pot of Gold Cupcakes are perfect for you this year. My kids loved getting in the kitchen and helping me make them, and I loved spending time with them.

Cupcakes are a family favorite because they are so easy to throw together, and everyone gets their own. We love putting a seasonal spin on our cupcakes and these Pot of Gold Cupcakes are perfect for St. Patrick’s Day! My kids love helping in the kitchen and these are so fun to put together. They are also so simple, so you’re going to love how easy it is to make them. 

Sweet treats are a favorite in our house, and if they are simple to pull together, even better! We are always making something like Glow in the Dark Cupcakes or Rainbow Cool Whip Sandwiches. I love that my kids can help me make something and they love that they have a delicious treat when they’re done! 

Are Pot of Gold Cupcakes Hard to Make?

These cupcakes are so easy to make. Simply grab some pre-baked cupcakes and a few candies and you’re ready to go! Your kids can help you put them together, as well!

Ingredients

  • Pre-baked Cupcakes
  • Airhead Xtremes Belts Sweetly Sour
  • Mini Reese Cups
  • Gold sequin edible sprinkles or fold pearl sugar sprinkles 
  • Frosting, fitted in a piping bag 

How to Make Pot of Gold Cupcakes

  • Prepare your airheads by cutting them in half.

  • Pipe a swirl onto the cupcakes.

  • Immediately push your airhead rainbow into the icing.

  • Pipe a small amount of frosting onto the Reeses cup.

  • Dip it into the sprinkles (this is less messy than dumping sprinkles)

  • Place the Reeses Cup at the end of the Rainbow.

Tips, Tricks and FAQs

  • Simply make a boxed cake mix according to the direction for the cupcakes, or pick up a package of undecorated cupcakes from the grocery store. 
  • Add more sprinkles if you’d like!
  • Try a Rolo as a pot of gold instead of a Reece’s cup if peanut butter is an issue. 

Storage

Store these cupcakes in an air-tight container on the counter. Don’t wait too long, though, because the cupcake will get stale and the candies will harden. 

Can I Make These Ahead of Time?

Yes, you can make these up to 24 hours in advance. Just be sure to store them in an air-tight container until you are ready to eat them.

These simple and adorable Pot of Gold Cupcakes are perfect for your family this St. Patrick's Day. Your kids will love creating them with you and you'll love the family time spent baking together.

Ingredients

  • Pre-baked Cupcakes

Instructions

Cut the airheads in half. 

Pipe a swirl onto the cupcakes.

Immediately push the airheads rainbow into the icing.

Pipe a small amount of frosting onto the Reeses cup.
