Summer is my favorite time of year for so many reasons, but the food is definitely part of it! I love light, sweet treats when it gets warm out, and if it’s a cold treat, even better! I have been loving having Strawberry Lasagna and Snickers Apple Salad on hand when I need a sweet treat. It is even better when they are so easy to make!  That’s why I love these Rainbow Cool Whip Sandwiches. They are cool and sweet, and they come together in a snap.

Are Rainbow Cool Whip Sandwiches hard to make?

Rainbow cool whip sandwiches are so easy to make. You can make these with only 3 ingredients. You can pull them together in a couple of minutes, and then you just freeze them and enjoy!

Rainbow Cool Whip Sandwiches

  • Serves: 12
  • Prep Time: 5 min
  • Freeze Time: 6 hours

Ingredients

  • 12 graham crackers (whole)
  • 1 tub whipped topping (8 oz)
  • Sprinkles 

Instructions

  • Break each graham cracker into two squares.

  • Drop 3 Tbsp of whipped topping onto the graham crackers and use the other side to press onto the top to create the sandwich.

  • Smooth the edges with a small spoon.
  • Dip each side of the sandwich into sprinkles to fully coat.

  • Place onto a dish and set in the freezer for at least 6 hours to fully freeze.

Tips, Tricks and FAQs

  • Be sure to let these Rainbow Cool Whip Sandwiches freeze long enough. They are much better when the cool whip is hardened.  If you don’t let them freeze long enough, the cool whip will ooze out.
  • Use whatever color sprinkles you want! A 4th of July block party? Red, white, and blue sprinkles. A unicorn birthday? Pink and purple sprinkles. The possibilities are endless! 
  • If you prefer, you can omit the sprinkles altogether. 
  • Try a different graham cracker flavor for a unique twist! Cinnamon, vanilla, or chocolate graham crackers would be perfect. 
  • I prefer to use a full-fat cool whip rather than low-fat. I think it has a better texture, and these sandwiches come in at only 100 calories a piece, so they’re already a low-calorie treat!

Storage

Store these sandwiches in an air-tight container in the freezer. They don’t last super long, up to 1 week, because the graham crackers get soft, so don’t wait too long. I know I can’t keep them around very long because they are so tasty, I can’t resist!
