Is anyone else seeing videos of cakesicles everywhere lately? These look-a-like popsicle cake pops are everywhere and they look so delicious so of course, I had to try making them!

You can’t go wrong with cake in my house! I can’t get enough of Mixed Berry Chantilly Cake, Lemon Lime Pound Cake, or even my Oreo Cake In A Mug So learning how to make cakesicles might be a little dangerous! 

All you’ll need is a popsicle mold and these directions and you can make your own insta-perfect cakesicles that are just as delicious as they look. 

These easily customizable sweet treats are perfect for birthdays, baby showers, engagement parties, and everything in between! And of course, your kids won’t get enough of making them or eating them!

How to Make Cakesicles

Cakesicles are so gorgeous! And they taste great too. You’ll love this tutorial because you can use any flavors and make them look perfect for any event!

Ingredients

supplies for popsicle pops: chocolate dough, sprinkles, yellow chocolate, popsicle sticks, melted white chocolate, popsicle molds
  • Cake pop dough
  • Colored candy melts
  • Almond bark or Ghirardelli melting wafers
  • Popsicle sticks

How to Make Cakesicles

  • To make your cakesicles, start by preparing your cake pop dough. To do this, mix together cake crumbs and buttercream until they form a smooth dough.
  • Next, place your almond bark or melting wafers in a microwave-safe bowl.
  • Put the candy melts in the microwave for 1 minute and stir.
  • Continue microwaving the melts in 30-second increments until they are completely melted and smooth.
  • Spoon 1-2 tablespoons of melted chocolate into one of the cakesicle molds.
  • Spread the chocolate all the way around the mold using the back of the spoon, being careful to coat the whole cavity evenly. 
  • Wipe any excess chocolate that may have gotten on the rim of the mold.
  • Slide a popsicle stick into the mold, making sure that it isn’t hitting the chocolate. 
  • Repeat with the remaining cavities and place the mold in the freezer for 15 minutes until the chocolate is set.
  • Remove the mold from the freezer. Take some cake pop dough and press it gently into the cavities until they are completely filled, trying not to break the chocolate shell. 
  • Spread some of the same melted chocolate over the top of each cakesicle and return the mold to the freezer for 15 minutes.
  • When the cakesicles are set, remove them by loosening one of the end pieces and peeling back the mold from the top of the cake pop until it’s free. 
  • Set the finished cakesicles on a parchment-lined baking sheet to rest.
  • Prepare your decorations by melting some colored melting chocolate in the same way as before.
  • Place the melted chocolate in a piping bag or a plastic bag and cut a small opening at the tip. 
  • Drizzle the chocolate over each cakesicle and immediately top with any sprinkles or decorations. 
  • Let the cakesicles set for 15 minutes before serving or 30-45 minutes before bagging.

Tips Tricks and FAQs 

  • If it’s your first time using your mold, you’ll probably need to get the mold ready by popping out the hole that the stick will fit through. To make it easier on yourself, you’ll definitely want to do this step before filling up your mold with your cake pop dough!
  • Depending on the brand of your candy melts, you may need to add about 1 teaspoon of vegetable oil (or other flavorless oil) to thin it out enough to coat the mold easily.
  • When you are coating your mold in chocolate, you want just enough chocolate to coat the cavity. The goal is to have a thin shell around your popsicle cake pops! If you add too much, you’ll have a messier and less enjoyable cake pop to eat.
  • If you are having trouble with your stick staying in the dough, you can dip the stick into some melted chocolate and re-insert it into the mold to give it a little glue! 
  • Having the chocolate shell break is so frustrating! But instead of trying to fix it, just carefully remove the chocolate and start over with some newly melted chocolate! Set the mold again, and don’t worry about it. 

Storage

Store your cakesicles in a sealed container or bag in the fridge for up to 1 week or in the freezer for up to 4 months!
