Is it just me, or do you sometimes just get this craving that only a slice of pie will satisfy? And since pies aren’t exactly the simplest thing to whip up, these strawberry hand pies are always coming to my rescue!

Alongside my Apple Crostata, these strawberry hand pies are the best for whipping up a quick pie without all the work. But don’t think for a second that these are a “poor-man’s pie” or some sort of second-best! These strawberry hand pies with pie crust and dreamy strawberries and cream filling are so good!

And even better? They are so easy to make! Hand pies are a perfect option to make as a quick treat. They’re even simple enough to make with your kids. Just make sure your strawberry filling is cooled down enough for little hands to handle!

Strawberry Hand Pies With Pie Crust

These easy strawberry hand pies are as close to perfect as it gets. They’re simple, fast, and absolutely delicious! Your family will love them!

Ingredients

  • 2 cups strawberries, washed and roughly chopped 
  • 1 cup sugar
  • 1 lemon, juice and zest
  • 1 tbsp cornstarch
  • 2 pie crusts, store-bought
  • 2-3 tbsp Sugar in the Raw
  • 4 oz cream cheese, softened 
  • 1 egg

How to Make Strawberry Hand Pies

  • To make your strawberry hand pies, start preheating your oven to 375 degrees.
  • In a heavy-bottom skillet, add the strawberries and sugar and place over medium heat. 
  • Cook the berries and sugar for about 4-5 minutes, stirring occasionally.
  • Use a potato masher or spoon to smash the softened berries up and continue cooking on low until it reaches a jam consistency. 
  • Mix together the cornstarch and lemon juice in a small bowl to create a slurry. 
  • Add the slurry to the cooking strawberry mixture and stir to combine.
  • When the strawberry filling reaches the desired consistency, remove it from the heat.
  • Remove the pie crust from the packaging, unroll it, and place it on the counter or a cutting board.
  • Use a small bowl or cookie cutter to cut circles about 5 inches across. You should be able to get about 20 circles.
  • Place the cut dough circles on baking trays lined with parchment paper. 
  • Smooth about 1 teaspoon of cream cheese to the center of a dough circle.
  • Add 1 tsp of strawberry jam on top of the cream cheese.
  • Beat the egg in a small bowl with 1 teaspoon of water to make an egg wash. Brush the mixture around the outer rim of the dough circle with the filling and place a second circle on top.
  • Use a fork to seal the edges of the hand pie.
  • Brush the top of the pie with the egg wash and sprinkle on some raw sugar. 
  • Make a small slit in the top of the pie to give it a vent. 
  • Repeat on the remaining pies and bake in the preheated oven for 18-20 minutes or until golden brown.

Tips Tricks and FAQs 

  • Want an even faster version of these strawberry hand pies? In a pinch, I have grabbed strawberry preserves and used those instead of a homemade filling and they still turn out so great! You could easily have these hand pies ready in under a half-hour with this trick!
  • Don’t be tempted to step away from your strawberry filling while it cooks, trust me! Anything with sugar in it like this can burn so fast, so you’ll want to stay close and keep stirring the mixture while it’s on the heat to prevent any burning.
  • If you feel like your strawberry mixture isn’t thickening, be patient! And once you add your cornstarch slurry, it’ll thicken fast. So stay close and keep stirring and it will be done in just a bit!

Storage

To store your leftover hand pies, place them in an airtight container in the fridge for up to 4 days.
